Cascina degli Ulivi
If only all 'entry-level' wine was made like this. 100% cortese, clean acacia flowers, hints of beeswax and mint.
"I've always said that our force is the truth. When you start drinking natural wine, or eating natural cheese, natural bread, natural food… When you start eating real food, products from the earth that have a true link to their terroir, you don't go back. "

Stefano Bellotti has been working on the estate since 1977 he was just 18. The farm is known for its wines but there is a lot more behind it: a diversified production of fruit, vegetables and cereals, animal breeding. This biodiversity is an essential factor in biodynamic farming, which treats farms as self-contained, self-sufficient entities requiring little or no inputs from the outside. Cortese grown on clay soil. Light, crisp and dry. Fresh and floral, with bitter almond notes. Meant to be consumed young.
