Olivier Pithon uses grapes grown organically on schist soils. The wines are produced in a mixture of aged barrels as well as using 600-litre capacity oak barrels.
'Maybe its strange to name a wine with the name of a cow. Not so twisted when one knows Lais, a Jersey in Catalonia. It sums up quite well the wine. There is all the freshness and vivacity of the North, married to the richness of the Mediterranean.'
