Branko & Vasja Čotar
The Čotar vineyards are 5km from the sea, a rocky limestone plateau between the Vipava River Valley and the Bay of Trieste.
'Here is where the sun dwells. From the north the fierce Bora wind blows down to the sea. Here oaks grow among the boulders, and dogwood, smoke tree, winter savory, and wild rose. And, growing in the unique red earth-terra rossa-the grapevine.'
Vitovska is a dry white wine, made with the traditional Vitovska grape, now mostly used in Northern Italy. It has a deep golden yellow colour. A gentle and elegant freshness of taste. Warm and mineral aftertaste. Low yield from rocky soils means just one bottle is produced per plant.
